Ingredents

  • 500g chicken pieces (wings, drumsticks, or thighs)
  • 1 large egg
  • 1/2 cup flour (plus two tablespoons reserved)
  • 1 tsp garlic powder
  • 1 tsp ginger powder
  • 1/2 tsp salt
  • 1/2 tsp black pepper
  • 1 tbsp soy sauce
  • 1 tbsp honey
  • 1-2 tbsp Nando’s chilli sauce (adjust to preferred spice level)
  • Fresh parsley, chopped (for garnish)
  • Vegetable oil (for frying)

Directions

Step 1

In a large mixing bowl, whisk together the egg, two tablespoons of flour, garlic powder, ginger powder, salt, black pepper, soy sauce, honey, and Nando’s chilli sauce. Gradually add a small amount of water until the marinade has a smooth consistency that will coat the chicken well.

Step 2

Add the chicken pieces to the bowl, ensuring each piece is well coated. Cover the bowl and let the chicken marinate in the fridge for at least 20 minutes to absorb the flavours.

Step 3

After marinating, remove the chicken from the bowl. Place the remaining flour in a separate bowl and lightly coat each piece of chicken, tapping off excess flour to create a light, crispy exterior.

Step 4

Heat oil in a deep pot or frying pan over medium-high heat. When the oil is hot (around 175°C / 350°F), carefully add the chicken pieces in small batches to avoid overcrowding. Lower the heat to medium to prevent the exterior from burning. Fry for about 15-20 minutes, turning occasionally until the chicken is golden brown and cooked.

Step 5

Mix an extra tablespoon of Nando’s chilli sauce and a little honey to make a spicy-sweet glaze in a separate bowl. When the chicken is done, remove it from the oil and rest on a paper towel to drain excess oil.

Step 6

While still warm, place the fried chicken in the bowl with the spicy-sweet glaze. Toss to ensure an even coating. Garnish with fresh chopped parsley for a burst of colour and flavour.
